From U.T. Extension White County.  In THE KITCHEN: Roasting uses the heat from the air inside the oven to cook meats evenly and thoroughly without burning or drying out the meat. It also gently breaks down fat to infuse the meat with incredible flavor. On the menu is seasoned roasted vegetables with a little rotisserie chicken on the side. These young chefs did an amazing job!
